Butterscotch Coffee Cake
Combine in a small bowl (using a fork to get the clumps out) and set aside:
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 2 tsp. cinnamon
Combine in a large bowl:
- 2 c. flour
- 1 c. white sugar
- 2 tsp. baking powder
- 1 pkg. dry instant vanilla pudding
- 1 pkg. dry instant butterscotch pudding
- 1 c. cold water
- 3/4 c. oil
- 1 tsp. vanilla
- 4 large eggs
- Preheat oven to 350 degrees.
- Beat the contents of the large bowl with a mixer until light and fluffy.
- Pour 1/2 of the batter into a 9x13 greased/floured pan.
- Sprinkle with 1/2 of the sugar mixture.
- Pour remaining batter into the pan.
- Top with the rest of the sugar mixture.
- Bake for 60 minutes.
Serve warm with a cup of coffee or with a cold glass of milk.
